Maple Syrup Production Underway

Michigan’s maple syrup producers will be tapping thousands of Maple trees in Michigan over the next month to make maple syrup. Owner of Out of the Woods Farm in northern Michigan near Elk Rapids, Joe Woods, says sap has about 2% sugar and they need 66% sugar.

“Well that’s done basically by boiling up is the very traditional way of doing it,” says Woods. “We do have a couple ways that we can kind of make that happen a little quicker but for the most part we’re just eliminating water so it takes about forty gallons of sap to make one gallon of syrup.”

Woods produces about 600 to 800 gallons of maple syrup a year as well as maple candy, and other products.
